The sugar cane is harvested by hand, then delicately crushed in order to extract a juice of the best quality. It is then fermented for a period which varies between 20 and 24 hours in order to obtain the cane wine which will then be distilled in a copper still. The distillate follows a process called the French kiss which involves placing it in French cognac barrels for 6 months, before being blended. Hennessy X.O was born in 1870, the result of a meeting between two men and of their common will: Maurice Hennessy, fourth generation of Hennessy at the head of the House, and Emile Fillioux, third generation of Master Assemblers. In the mid-19th century, both were driven by a search for innovation and a demanding philosophy of the subtle art of blending eaux-de-vie. In 1865, the star coding of the House's cognacs was created, a major novelty that will allow consumers to know the age and the exact category of the eaux-de-vie they buy. That same year, the two men developed the culture of blends as we still know it today. DIGESTIVES
“Génépi” is a generic term given by the inhabitants of the region to several aromatic plants (sagebrush) from the Alps. Pisco Porton is a wine brandy produced in Peru. Pisco is obtained by distillation of the grapes without prolonging the aging in wooden barrels, with the exception of a part of Chilean production. Distilled in the Ica Valley of Peru on the slopes of the Andes in the oldest distillery in the Americas, Pisco Portón was created by Johnny Schuler, the iconic taster and best ambassador of Pisco in the world.
It is the oldest and most famous of the famous Amaretto liqueurs: Amaretto Disaronno, a recipe known and handed down since 1525! Soft and sweet, with a pronounced almond taste, it is based on almonds. Amber color, caramel. Very lively scents of almonds on the nose. Sweet and very smooth taste.
BRANDY

"Pure fruit" apricot brandy is obtained by natural fermentation, then distilled in traditional copper stills. It is aged for at least 2 years in vats. This brandy expresses the fresh and delicious taste of ripe apricot, combined with a discreet note of almond. 42% Vol.,
Pear brandy or alcohol is made from the Williams variety selected from the best French orchards. 40% Vol.,
Obtained from a maceration and distillation of raspberries. The aroma and taste come exclusively from the fruit. 40% Vol.,
Sambuca is often served flambé with three whole coffee beans.
